Devoured : how what we eat defines who we are by Sophie EganA provocative look at how and what Americans eat and why--a flavorful blend of The Omnivore's Dilemma, Salt Sugar Fat, and Freakonomics that reveals how the way we live shapes the way we eat. Food writer and Culinary Institute of America program director Sophie Egan takes readers on an eye-opening journey through the American food psyche, examining the connections between the values that define our national character--work, freedom, and progress--and our eating habits, the good and the bad. Egan explores why these values make for such an unstable, and often unhealthy, food culture and, paradoxically, why they also make America's cuisine so great.

Fair Food by Oran B. HestermanA host of books and films in recent years have documented the dangers of our current food system, from chemical runoff to soaring rates of diet-related illness to inhumane treatment of workers and animals. But advice on what to do about it largely begins and ends with the admonition to "eat local or "eat organic." Fair Food is an enlightening and inspiring guide to changing not only what we eat, but how food is grown, packaged, delivered, marketed, and sold. Oran B. Hesterman shows how our system's dysfunctions are unintended consequences of our emphasis on efficiency, centralization, higher yields, profit, and convenience--and defines the new principles, as well as the concrete steps, necessary to restructuring it. Along the way, he introduces people and organizations across the country who are already doingthis work in a number of creative ways, from bringing fresh food to inner cities to fighting for farm workers' rights to putting cows back on the pastures where they belong. He provides a wealth of practical information for readers who want to get more involved.

Eating Right in America by Charlotte BiltekoffEating Right in America is a powerful critique of dietary reform in the United States from the late nineteenth-century emergence of nutritional science through the contemporary alternative food movement and campaign against obesity. Charlotte Biltekoff analyzes the discourses of dietary reform, including the writings of reformers, as well as the materials they created to bring their messages to the public. She shows that while the primary aim may be to improve health, the process of teaching people to "eat right" in the U.S. inevitably involves shaping certain kinds of subjects and citizens, and shoring up the identity and social boundaries of the ever-threatened American middle class. Without discounting the pleasures of food or the value of wellness, Biltekoff advocates a critical reappraisal of our obsession with diet as a proxy for health. Based on her understanding of the history of dietary reform, she argues that talk about "eating right" in America too often obscures structural and environmental stresses and constraints, while naturalizing the dubious redefinition of health as an individual responsibility and imperative.

Real Food, Fake Food by Larry Olmsted"Olmsted makes you insanely hungry and steaming mad--a must-read for anyone who cares deeply about the safety of our food and the welfare of our planet." --Steven Raichlen, author of the Barbecue! Bible series "The world is full of delicious, lovingly crafted foods that embody the terrain, weather, and culture of their origins. Unfortunately, it's also full of brazen impostors. In this entertaining and important book, Olmsted helps us fall in love with the real stuff and steer clear of the fraudsters." --Kirk Kardashian, author of Milk Money: Cash, Cows, and the Death of the American Dairy Farm You've seen the headlines: Parmesan cheese made from wood pulp. Lobster rolls containing no lobster at all. Extra-virgin olive oil that isn't. So many fake foods are in our supermarkets, our restaurants, and our kitchen cabinets that it's hard to know what we're eating anymore. In Real Food / Fake Food, award-winning journalist Larry Olmsted convinces us why real food matters and empowers consumers to make smarter choices. Olmsted brings readers into the unregulated food industry, revealing the shocking deception that extends from high-end foods like olive oil, wine, and Kobe beef to everyday staples such as coffee, honey, juice, and cheese. It's a massive bait and switch in which counterfeiting is rampant and in which the consumer ultimately pays the price. But Olmsted does more than show us what foods to avoid. A bona fide gourmand, he travels to the sources of the real stuff to help us recognize what to look for, eat, and savor: genuine Parmigiano-Reggiano from Italy, fresh-caught grouper from Florida, authentic port from Portugal. Real foods that are grown, raised, produced, and prepared with care by masters of their craft. Part cautionary tale, part culinary crusade, Real Food / Fake Food is addictively readable, mouthwateringly enjoyable, and utterly relevant.

Should We Eat Meat? by Vaclav SmilMeat eating is often a contentious subject, whether considering the technical, ethical, environmental, political, or health-related aspects of production and consumption. This book is a wide-ranging and interdisciplinary examination and critique of meat consumption by humans, throughout their evolution and around the world. Setting the scene with a chapter on meat's role in human evolution and its growing influence during the development of agricultural practices, the book goes on to examine modern production systems, their efficiencies, outputs, and impacts. The major global trends of meat consumption are described in order to find out what part its consumption plays in changing modern diets in countries around the world. The heart of the book addresses the consequences of the "massive carnivory" of western diets, looking at the inefficiencies of production and at the huge impacts on land, water, and the atmosphere. Health impacts are also covered, both positive and negative. In conclusion, the author looks forward at his vision of "rational meat eating", where environmental and health impacts are reduced, animals are treated more humanely, and alternative sources of protein make a higher contribution. Should We Eat Meat? is not an ideological tract for or against carnivorousness but rather a careful evaluation of meat's roles in human diets and the environmental and health consequences of its production and consumption. It will be of interest to a wide readership including professionals and academics in food and agricultural production, human health and nutrition, environmental science, and regulatory and policy making bodies around the world.

Vegetarianism: a Guide for the Perplexed by Kerry WaltersThe choice of whether or not to consume animals is more than merely a dietary one. It frequently reflects deep ethical commitments or religious convictions that serve as the bedrock of an entire lifestyle. Proponents of vegetarianism frequently infuriate nonvegetarians, who feel that they're being morally condemned because of what they choose to eat. Vegetarians are frequently infuriated by what they consider to be the nonvegetarians' disregard for the environment and animal-suffering. Vegetarianism: A Guide for the Perplexed offers a much needed survey of the different arguments offered by ethical vegetarians and their critics. In a rigorous but accessible manner, the author scrutinizes the strengths and weaknesses of arguments in defense of vegetarianism based on compassion, rights, interests, eco-feminism, environmentalism, anthrocentrism, and religion. Authors examined include Peter Singer, Tom Regan, Carol J. Adams, and Kathryn Paxton George. As the global climate crisis worsens, population increases, and fossil fuels disappear, ethical and public policy questions about the ethics of diet will become ever more urgent. This book is a useful resource for thinking through the questions.

The Vegan Studies Project by Laura WrightThis inescapably controversial study envisions, defines, and theorizes an area that Laura Wright calls vegan studies. We have an abundance of texts on vegans and veganism including works of advocacy, literary and popular fiction, film and television, and cookbooks, yet until now, there has been no study that examines the social and cultural discourses shaping our perceptions of veganism as an identity category and social practice. Ranging widely across contemporary American society and culture, Wright unpacks the loaded category of vegan identity. She examines the mainstream discourse surrounding and connecting animal rights to (or omitting animal rights from) veganism. Her specific focus is on the construction and depiction of the vegan body--both male and female--as a contested site manifest in contemporary works of literature, popular cultural representations, advertising, and new media. At the same time, Wright looks at critical animal studies, human-animal studies, posthumanism, and ecofeminism as theoretical frameworks that inform vegan studies (even as they differ from it). The vegan body, says Wright, threatens the status quo in terms of what we eat, wear, and purchase--and also in how vegans choose not to participate in many aspects of the mechanisms undergirding mainstream culture. These threats are acutely felt in light of post-9/11 anxieties over American strength and virility. A discourse has emerged that seeks, among other things, to bully veganism out of existence as it is poised to alter the dominant cultural mindset or, conversely, to constitute the vegan body as an idealized paragon of health, beauty, and strength. What better serves veganism is exemplified by Wright's study: openness, debate, inquiry, and analysis.

Sins of the Flesh by Rod PreeceUnlike previous books on the history of vegetarianism, Sins of the Flesh examines the history of vegetarianism in its ethical dimensions, from the origins of humanity through to the present. Full ethical consideration for animals resulting in the eschewing of flesh arose after the Aristotelian period in Greece and recurred in Ancient Rome, but then mostly disappeared for centuries. It was not until the turn of the nineteenth century that vegetarian thought was revived and enjoyed some success; it subsequently went into another period of decline that lasted through much of the twentieth century. The authority-questioning cultural revolution of the 1960s brought a fresh resurgence of vegetarian ethics that continues to the present day.
